Welcome back to my culinary corner, a virtual haven where the captivating aroma of simmering spices and the symphony of flavors form the backdrop. Here, the spotlight remains firmly on paella, that iconic Spanish dish that dances with the essence of the Mediterranean.
Classic Valencian Paella Recipe:
Ingredients:
- 2 cups of short-grain rice
- 1/2 cup extra virgin olive oil
- 1 large onion, chopped
- 4 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 ripe tomato, grated
- 1 sprig of fresh rosemary
- A pinch of saffron threads
- 1 teaspoon sweet paprika
- 4 cups chicken broth
- 1/2 kg chicken, cut into pieces
- 1/2 kg green beans, cut
- Salt and pepper to taste
- Lemon wedges for serving
Instructions:
- In a paella pan, heat the olive oil over medium heat. Add chicken and rabbit, season with salt and pepper, and cook until golden brown.
Add chopped onion, minced garlic, and sliced red pepper. Cook until the vegetables are tender.
Stir in the grated tomato, paprika, and rice. Mix well to combine all ingredients.
Add saffron threads and rosemary. Pour in the hot chicken broth, bring to a boil, then reduce the heat and simmer for 15-20 minutes.
Arrange green beans over the paella and cook until the rice is tender and the liquid has been absorbed.
Let the paella rest for a few minutes before serving. Garnish with lemon wedges.
